Cooking Class, 28/9/2010
Types of food prepared:
Lemony garbanzo beans, Thai coconut peanut soup, 3 types of jicima, cold Czech cheesecake
Frantisek's Cold Czech Cheesecake Recipe (Vegetarian)
Ingredients:
strained yogurt (Strauss organic whole yogurt, strain 3 hours)
2 cups yamamomo/Myrica rubra[1] (soft and slightly fermented)
1/4 cup lemon juice
1/4 cup honey (liquid)
2 cups of kombucha
1/2 cup coconut milk
honey graham crackers
Cookware needed:
Blender
Casserole pan
Cooling unit
Directions:
Strain yogurt with a muslin strainer for 3 hours
Blend yamamomo fruit with all the wet ingredients
Taste to see if you've created something delicious
Pour thin layer of yogurt mixture into pan
Layer 1 sheet of graham crackers across first yogurt layer
Alternate layers of yogurt mixture and graham crackers (at least 4 layers)
Finish top layer with graham crackers
Chill in refrigerator
Eat! Yum.
Meena's Thai Coconut Peanut Soup (Vegetarian)
Ingredients:
2 tbsp butter
1 onion (yellow)
1/2 tsp garlic
2 tbsp flour
2 tbsp curry
1/4 tsp red pepper
2 cans chicken broth (14.5oz)
1 can coconut milk (14oz)
1 cup creamy peanut butter
1/2 cup chopped peanuts
Cookware needed:
One pot for soup to be made in
Stirring utensil
Adjustable source of heat
Knife for chopping if peanuts aren't pre-chopped
Directions:
Melt butter in soup pot
Add onion - cook 5 minutes
Add garlic - cook 2 minutes
Add flour, curry, and red pepper - cook 1 min
Add chicken broth, bring to a boil
Simmer on low for 20 minutes
Add coconut milk and peanut butter, blend well
Garnish with chopped peanuts
Meena's Lemony Garbanzo Beans (Vegan)
Ingredients:
3-4 cloves garlic
1 large can garbanzo beans
1 small yellow onion
1-2tbsp olive oil
extra olive oil, lemon juice, salt to taste
Cookware needed:
Knife for chopping
Bowl for mixing
Pan for cooking
Stirring instrument
Directions:
Mince garlic and onion
Put 1-2b of olive oil in pan over medium-high heat
Add chopped garlic, sautee ~30 seconds
Add chopped yellow onion, sautee until lightly browned
Add garbanzo beans with juice
Bring to a boil
Season with olive oil, lemon juice, and salt to taste
Simmer until desired consistency achieved
Doug's Jicima Trifecta
Ingredients:
Whole jicima [2], chopped into matchstick-sized pieces
Raw sweet recipe: cinnamon, heavy sugar to taste
Sauteed savory recipe: salt, pepper, cinnamon, heavy sugar to taste, olive oil, chopped white onion
Raw salad recipe: salt, pepper, olive oil, light sugar, chili flakes
Cookware required:
Bowls
Knife for chopping
Pan if you want to make sauteed savory recipe
Directions:
For raw recipes, mix ingredients to taste
For sauteed recipe, sautee jicima on medium heat with seasoning for 10 minutes
